Znate onu baku koju sam spominjala kod putera od lešnika? E pa poslednji put sam od nje dobila džakče jabuka. Divne, domaće, isčukane, nepravilne, neprskane jabuke. I tako sam morala da se bacim na posao i smislim neke kul načine da ih iskoristim. Kad sam krenula da karamelizujem jabuke, prvo sam posegnula za cimetom..klasika jabuke i cimet. Al sam se zaustavila i odlučila da uradim nešto drugačije. Umesto cimeta stavila sam vanilu i crni biber. Biber dodaje pozadinsku ljutkastu notu i daje ovoj piti drskost i stav. Oduševljena sam:)
Prvo sam bila sva entuzijastična, kupila sto kila brašna i kao sad cu ća da mesim kore. I onda od vuklanja tih sto kila brašna malo posustanem, pa kao za ne daj bože ipak izvadim malo lisnatog iz leda, zlu ne trebalo. Pa ona malo popijem kafu, pa tu prođe vreme i shvatim da imam sat vremena do polaska na posao i pitu koja čeka da bude napravljena. I tu prestanem da lažem sebe:)
Sastojci: za okrugli kalup promera oko 25cm
- 250 gr lisnatog testa
- 4 veće jabuke
- 50 gr šečera
- sok pola limuna
- 1 mahuna vanile
- 15ak zrna bibera
- 30ak gr putera
Lisnato testo otopite na sobnoj temperaturi i razvaljajte na potrebne dimenzije. Jabuke očistite izvadite sredinu i isecite na kolutove.
Zagrejte tiganj bez plastičnih delova ili neku drugu vatrostalnu posudu koja može da ide na šporet. Pospite sud šećerom, dodajte limunov sok i biber. Mahunu vanile presecite uzduž, nožem sa ravnom oštricom sastružite semenke i ubacite ih u tiganj. Dodajte i preostale mahune okrenute otvorenom stranom na dole. Kada se šećer podjednako rastopi skinite tiganj sa vatre i poređajte jabuke u 2 sloja. Iseckajte puter odgore. Stavite preko testo, lepo ga ušuškajte i uvijte duže krajeve. Izbušite viljuškom nekoliko rupica. Stavite u rernu zagrejanu na 200 stepeni i pecite 30ak minuta. Dok testo ne porumeni.
Kada izvadite iz rerne, ostavite tart da odstoji 5 minuta, i onda stavite tanjir preko tiganja i obrnite ga.

Apple tarte Tatin with black pepper
Ingrediendts:
- 1 sheet frozen puff pastry, thawed but still cold
- 4 big apples
- 5 tablespoons of sugar
- juice of half a lemon
- 1 vanilla pod
- 15 black peppercorns
- 3 tablespoons of butter
Peel, core and slice the apples in circles.
Heat up the pan you'll be using and make sure it doesn't have any plastic parts that would be melted in the oven. Add sugar, lemon juice and pepper. Cut the vanilla pod in half lengthwise, scrape the seeds with a knife and to add them do the pan. Put the scraped pods to the pan also, scraped side down. When the sugar is evenly melter remove the pan from the fire and add the apples. Arrange them in two layers. Chop the butter over the apples.
Cover the apples with the puff pastry and tuck the pastry in. Fold the longer corners in.Make a few holes with a fork. Put it into and over preheated to 200 degrees C, or 400 degrees F. Let it bake for about 30 minutes, until the pastry is golden.
Then, take it out of the oven and let it sit for 5 minutes. Put a plate over the pane, wish yourself luck, and quickly turn it over. And there you have it, an upside down cake:)

He, he, takve ja imam slučajeve što se tiče posla, puno planirano, a kad vidiš da ne stižeš panika...Sviđa mi se ova kombinacija sa paprom
ReplyDelete:) al se na kraju ispostavi da sva ta pompa nije ni bila neophodna. A biber je dao super notu, bas sam zadovoljna:)
